Spicy vermicelli upma Recipe
Ingredients:
- Vermicelli-2 cup (preferrably roasted,if not roast it in a pan with a little oil)
- Onion-1 finely chopped
- Carrot-1 chopped
- Capsicum-1 chopped
- Beans-5 chopped
- Frozen peas-1/2 cup
- Greenchilli-2 chopped finely
- Turmeric powder-1 tsp
- Chilli powder-1 tsp
- Lemon juice-2 tsp
- Salt-to taste
- Coriander leaves for garnishing
Seasoning: - Oil-2 tblspn
- Ghee-1 tblspn
- Mustard seeds-1 tsp
- Urad dal-1 tsp
- Cashew-5
- Cumin seeds-1 tsp
- Dry redchilli-1 tsp
- Asafoetida-1 tsp
- Curry leaves-1 spring
- Ginger-1 tsp finely chopped
- Garlic-1 tsp finely chopped
Method :
- Heat 3 cups of water in a sauce pan and let it come to a rolling boil.
- In a kadai add oil+Ghee and heat it up,Then Add all the seasoning ingrediant in the given order,let them sizzle for 1 min.
- Add onion and greenchilli and fry it till translucent,Now add in the turmeric and chilli powder.
- Add all the veggies and fry it for 2 mins.
- Add a splash of water and cover the pan and let it cook untill done.
- Now add the vermicelli and pour in the boiling water.
- Keep the heat to simmer and let it cook covered till the water is absorbed.
- Add in the chopped coriander and turn off the heat and let it stand for 10 min covered.
- While serving mix in the lemon juice and enjoy.
