In today’s cooking segment, let’s see how to prepare a tasty and healthy Vegetable masala Idli, a colorful twist to the traditional idli.

Ingredients

  • Idli batter
  • Carrot, beans, capsicum (finely chopped)
  • Green peas (optional)
  • Onion
  • Green chilies
  • Ginger
  • Curry leaves
  • Mustard seeds
  • Salt
  • Oil
For Stuffing (Optional)

  • Spiced green peas masala (pattaani masala)
  • Coconut chutney or tomato chutney
Preparation Method

1. Prepare Vegetable Mix

Heat oil in a pan. Add mustard seeds, curry leaves, ginger, green chilies, and onions. Sauté well. Add chopped vegetables and cook lightly with salt.

2. Mix with Batter

Add the sautéed vegetable mixture into the idli batter and mix gently.

3. Prepare Idli Plates

Grease idli moulds with a little oil and pour the batter.

4. Steam Cook

Steam the idlis in a steamer for about 10–12 minutes until fully cooked.

5. Optional Stuffing

For extra taste, you can add a green peas masala filling in the middle while pouring batter, similar to stuffed idlis.

Serving Suggestion

Serve hot vegetable masala idlis with coconut chutney, tomato chutney, or sambar.

Tip

Always steam idlis on medium heat. Overcooking can make them hard instead of soft.
