Ingredients:For Vada (Medu Vada):- 1 cup urad dal (split black gram), soaked 4-5 hours
- 1 green chili, finely chopped
- 1-inch ginger, finely chopped
- Few curry leaves, chopped
- Salt to taste

For Curry:- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 large onion, finely sliced
- 2 tomatoes, chopped
- 1 tsp ginger-garlic paste
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- Salt to taste
- 1 cup coconut milk (thick)
- 1/2 cup water (adjust consistency)
- Few curry leaves
- Fresh coriander leaves for garnish
Instructions:1.
Prepare Vadas: Drain soaked urad dal and grind to a smooth batter with little water. Add chopped green chili, ginger, curry leaves, and salt. Mix well.2.
Fry Vadas: Heat oil in a deep pan. Wet your hands, shape the batter into doughnut-shaped vadas, and deep fry on medium heat until golden and crisp. Drain on paper towels.3.
Make Curry: Heat oil in a pan. Add mustard seeds and cumin seeds; let them splutter. Add sliced onions and curry leaves; sauté until golden brown.4.
Add Spices: Add ginger-garlic paste and green chilies; sauté for 2 minutes. Add chopped tomatoes and cook until soft.5.
Add Powdered Spices: Stir in turmeric, red chili, coriander powder, and salt. Cook until oil separates.6.
Add Liquids: Pour coconut milk and water, bring to a gentle boil. Simmer for 5 minutes.7.
Add Vadas: Add fried vadas to the curry, cover and simmer for 10 minutes so they soak the flavors but don’t become mushy.8.
Finish: Sprinkle garam masala and garnish with fresh coriander.9.
Serve: Serve hot with steamed rice or dosa.
Tips:- Grind urad dal batter thick and fluffy for soft vadas.
