Sorakkai Kurma (Bottle Gourd Korma) Recipe

Ingredients:

  • 2 cups bottle gourd (sorakkai), peeled and chopped into cubes
  • 1 cup fresh grated coconut
  • 2 tbsp cashew nuts
  • 2 green chilies
  • 1-inch ginger piece
  • 1 tsp fennel seeds (saunf)
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 small onion, chopped
  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • Salt to taste
  • 1/2 cup water (adjust for desired consistency)
  • Fresh coriander leaves for garnish
Instructions:

1. Prepare the masala Paste:
In a blender, combine grated coconut, cashew nuts, green chilies, ginger, fennel seeds, cumin seeds, coriander seeds, and chopped onion. Add a little water and grind to a smooth paste.

2. Cook Bottle Gourd:
Heat oil in a pan. Add mustard seeds and curry leaves; let them splutter. Add the chopped bottle gourd and sauté for 2-3 minutes.

3. Add masala Paste:
Pour the ground coconut-cashew masala into the pan. Mix well with the bottle gourd.

4. Simmer:
Add salt and water. Cover and cook on medium heat for 10-15 minutes or until the bottle gourd is tender and the kurma thickens.

5. Finish & Garnish:
Adjust salt and consistency. Garnish with fresh coriander leaves before serving.

6. Serve:
Serve hot with steamed rice, chapati, or paratha.

Tips:

  • Use fresh coconut for the best flavor; frozen grated coconut works in a pinch.
  • Adjust the number of green chilies to control spiciness.
  • Cashew nuts add richness and creaminess; substitute with soaked almonds if desired.
  • Cook bottle gourd till tender but not mushy to retain texture.
  • For a richer kurma, add a tablespoon of ghee or butter towards the end.
  • This kurma also pairs well as a side with dosa or idli.
