Poondu Urugai Recipe (Garlic Pickle)

Ingredients:

  • 20–25 garlic cloves, peeled
  • 2–3 green chilies or 1–2 tsp red chili powder (adjust to taste)
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds (methi seeds)
  • 1/2 tsp turmeric powder
  • 1–2 tsp asafoetida (hing)
  • 2–3 tbsp sesame oil (or any neutral oil)
  • 1–2 tsp jaggery (optional, balances pungency)
  • Salt to taste
  • Curry leaves (optional, for aroma)
Instructions:

1. Prepare garlic:
Peel the garlic cloves and optionally crush them lightly for better flavor absorption.

2. Tempering:
Heat oil in a pan. Add mustard seeds and fenugreek seeds, letting them splutter. Add curry leaves and asafoetida, sauté for a few seconds.

3. Cook garlic:
Add garlic cloves, turmeric powder, and green chilies or red chili powder. Sauté on medium flame for 5–7 minutes until garlic turns slightly golden and aromatic. Avoid overcooking to retain some crunch.

4. Optional sweetness:
Add jaggery if desired to balance the strong pungency. Mix well and cook for another 2 minutes.

5. Cool and store:
Let the pickle cool completely. Transfer to a clean, dry airtight jar. It can be stored at room temperature for 1–2 weeks or in the refrigerator for longer shelf life.
