Varagu Paruppu Sadam (Kodo Millet Dal Rice)

Varagu (Kodo Millet) is one of the most nutritious ancient grains, and when combined with dal, it makes a light, protein-rich meal that is easy to digest and perfect for lunch or dinner.

🥘 Ingredients (Serves 2–3)

· Varagu (Kodo Millet) – ½ cup

· Moong dal (yellow split lentils) – ¼ cup

· Water – 3 cups

· Ghee – 1 tbsp

· Salt – to taste

· Turmeric powder – ¼ tsp

Optional Tadka (Tempering)

· Ghee – 1 tsp

· Mustard seeds – ½ tsp

· Cumin seeds – ½ tsp

· Hing (asafoetida) – a pinch

· Green chili – 1 slit

· Ginger – ½ inch piece (finely chopped)

· Curry leaves – few

👩‍🍳 Method

1. Rinse & Soak:

o Wash varagu millet and moong dal thoroughly.

o Soak for 10 minutes (optional, speeds up cooking).

2. Cook the Millet & Dal:

o In a pressure cooker, add millet, dal, turmeric, salt, water, and 1 tsp ghee.

o Cook for 3–4 whistles (or until soft and mushy).

3. Prepare Tadka:

o In a small pan, heat ghee, add mustard seeds.

o Once they splutter, add cumin, green chili, ginger, hing, and curry leaves.

o Sauté for a few seconds until fragrant.

4. Mix & Serve:

o Pour the tempering over the cooked millet-dal mixture.

o Mix well and adjust consistency with hot water if needed (should be soft like pongal).

o Serve hot with pickle, papad, or a dollop of ghee on top.
