· A pinch of asafoetida (hing)

For the Seasoning:

· 1/2 tsp turmeric powder

· 1–2 tsp jaggery or sugar (optional, balances sourness)

· salt to taste

· 2 tbsp roasted peanuts (optional)

Step-by-Step Recipe

1. Prepare the Mango

Grate the raw mango and set aside. raw mango gives a tangy flavor that’s signature to this dish.

2. Cook the Tempering

1. Heat oil in a pan.

2. Add mustard seeds and let them splutter.

3. Add urad dal and chana dal, fry until golden.

4. Add dried red chilies, green chilies, curry leaves, and a pinch of asafoetida. Sauté for 1–2 minutes.

3. Add Mango and Spices

1. Add grated mango, turmeric powder, and jaggery/sugar (if using).

2. Cook on medium heat for 2–3 minutes until mango softens slightly.

4. Mix Rice

3. Add salt to taste and roasted peanuts (if using).

5. Serve
