Broken wheat sweet Sannan (also known as godhi rava sannam or candy lapsi) is a conventional South indian or Goan candy dish made from broken wheat (dalia), jaggery, and ghee. It’s mildly spiced, aromatic, and ideal as a festive or nutritious dessert.


Components:

1 cup damaged wheat (dalia)


¾ cup grated jaggery


2 tbsp ghee


2 ½ cups water


½ tsp cardamom powder


2 tbsp grated coconut (non-compulsory)


Some cashews and raisins


A pinch of salt


Step-by-Step approach:

Roast damaged Wheat

Heat 1 tbsp ghee in a heavy-bottomed pan. Add damaged wheat and roast on medium warmth till it turns golden brown and fragrant. Set aside.


Boil Water

In a separate pan, boil 2½ cups of water with a pinch of salt. As soon as it boils, add the roasted broken wheat slowly, stirring constantly to keep away from lumps.


Cook dinner until smooth

Cover and prepare dinner on low warmness till the damaged wheat will become soft and water is absorbed (about 10–12 minutes).


Upload Jaggery

Upload grated jaggery and stir nicely. The combination will loosen up again. Cook for another five–7 minutes, stirring until thick.


Flavoring

Add cardamom powder and grated coconut (if using).


Mood and Garnish

In 1 tbsp ghee, fry cashews and raisins. Upload to the candy Sannan and mix well.
