Nellikai Sadam Recipe (Amla Rice)

Ingredients:

  • 1 cup cooked rice (preferably cooled)
  • 2 medium-data-sized amlas (Indian gooseberries), grated or finely chopped
  • 2 tbsp oil (preferably sesame or mustard oil)
  • 1 tsp mustard seeds
  • 1 tsp chana dal (split bengal gram)
  • 1 tsp urad dal (split black gram)
  • 2 dry red chilies
  • 1-2 green chilies, slit
  • 1/4 tsp asafoetida (hing)
  • 8-10 curry leaves
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chili powder (optional)
  • Salt to taste
  • 2 tbsp chopped coriander leaves
  • 1 tbsp grated coconut (optional)
  • 1 tbsp lemon juice (optional, if you want extra tang)
Instructions:

1. Prepare Amla: Wash the amlas well, boil them in water until soft, cool, and then grate or finely chop. Alternatively, you can use raw grated amla if you prefer a sharper taste.

2. Tempering: Heat oil in a pan on medium heat. Add mustard seeds and wait for them to crackle. Then add chana dal, urad dal, dry red chilies, green chilies, asafoetida, and curry leaves. Fry until the dals turn golden brown.

3. Add Amla: Add the grated amla, turmeric powder, red chili powder, and salt. Cook for about 3-4 minutes until the raw smell of amla disappears and it softens further.

4. Mix Rice: Add the cooked rice to the amla mixture. Mix gently but thoroughly so the amla coats the rice evenly.

5. Finish: Turn off the heat and add chopped coriander leaves and grated coconut if using. For extra tanginess, add lemon juice and mix.

6. Serve: Serve warm or at room temperature. Nellikai Sadam pairs well with plain yogurt or a simple vegetable curry.

Tips:

  • Use slightly cooled or day-old rice for better texture; freshly cooked hot rice can become mushy.
  • Adjust green chilies and chili powder as per your heat preference.
  • Adding grated coconut enhances flavor and texture but is optional.
  • If you find raw amla too sour, boiling it beforehand mellows the taste.
  • Store leftover Nellikai Sadam in the fridge and consume within 1-2 days for freshness.
