Kothamalli Pudina Sadam Recipe (Coriander Mint Rice)

Ingredients:

  • 1 cup basmati or sona masoori rice
  • 1 cup fresh coriander leaves (kothamalli), tightly packed
  • 1/2 cup fresh mint leaves (pudina), tightly packed
  • 2 green chilies (adjust to taste)
  • 1-inch ginger piece
  • 2 tbsp roasted peanuts or cashews
  • 1 tsp cumin seeds
  • 2 tbsp oil or ghee
  • 1 medium onion, thinly sliced (optional)
  • 1 tbsp lemon juice
  • Salt to taste
  • Water, as needed
Instructions:

1. Cook Rice: Wash and cook the rice until fluffy but not mushy. Spread on a plate to cool.

2. Prepare Herb Paste: In a blender, combine coriander leaves, mint leaves, green chilies, ginger, roasted peanuts or cashews, and cumin seeds. Add a little water and blend into a smooth paste.

3. Sauté Onions: Heat oil or ghee in a pan. If using, sauté sliced onions until golden and caramelized for extra flavor.

4. Mix Paste: Add the herb paste to the pan and cook for 2-3 minutes on medium heat to remove raw smell.

5. Combine Rice: Add the cooked rice and salt to the pan. Mix gently to coat the rice evenly with the herb mixture.

6. Finish: Stir in lemon juice for freshness. Adjust salt as needed.

7. Serve: Garnish with extra roasted nuts or fresh coriander leaves. Serve warm with yogurt or pickle.
