Badam Burfi Recipe | Almond Burfi with Tips & Tricks

Badam Burfi, or Almond Burfi, is a classic indian sweet loved for its rich taste, smooth texture, and nutty flavor. Made primarily from ground almonds, sugar, and ghee, this delicacy is popular during festivals like Diwali, Raksha Bandhan, and other celebrations.

Ingredients:

  • 2 cups almonds (badam), soaked and peeled
  • 1 cup sugar
  • 1/2 cup water
  • 3 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • Silver varak (optional) for garnishing
Preparation Steps:

1. Soak and Peel Almonds
Soak the almonds in hot water for about 30 minutes. Peel off the skins carefully; this makes the burfi smooth and enhances the taste. Dry the peeled almonds using a clean cloth.

2. Grind Almonds
Grind the peeled almonds to a fine powder or slightly coarse, depending on your preference. Avoid adding water during grinding to keep the texture perfect.

3. Prepare sugar Syrup
In a heavy-bottomed pan, add sugar and water. Heat the mixture and cook until it reaches a one-string consistency. To check, take a drop between your fingers and stretch — it should form a single thread.

4. Cook Almond Mixture
Add the almond powder gradually to the sugar syrup while stirring continuously to avoid lumps. Cook on low to medium heat.

5. Add ghee and Cardamom
Once the mixture thickens and starts leaving the sides of the pan, add ghee and cardamom powder. Mix well and continue cooking until the mixture forms a dough-like consistency.

6. Set the Burfi
Grease a plate or tray with ghee. Pour the mixture evenly onto it and spread using a spatula. Flatten the surdata-face and allow it to cool slightly.

7. Cut and Garnish
Before it hardens completely, cut the burfi into squares or diamonds. Optionally, garnish with silver varak for a festive look.

  • Use fresh, good-quality almonds for the best flavor.
  • Peeling almonds is key to a smooth texture and prevents bitterness.
  • Stir continuously while cooking to avoid burning or sticking.
