· Asafoetida (hing) – a pinch

· Salt – to taste

· Red chili powder – ½ tsp (optional)

Step-by-Step Preparation

1. Soak and Grind Moong Dal

· Soak moong dal for 2–3 hours.

· Drain and grind coarsely into a slightly grainy batter (not too smooth) using minimal water.

2. Add Spices and Herbs

· Transfer batter to a bowl and mix: green chilies, ginger, coriander, cumin, hing, salt, and chili powder.

· Ensure the mixture is thick enough to hold shape for frying.

3. Heat oil for Frying

· Heat oil in a deep frying pan over medium heat.

· Test oil by dropping a small portion of batter; it should sizzle and rise slowly.

4. Shape and Fry Pakodas

· Using a spoon, drop small portions of batter into the hot oil.

· Fry until golden brown and crispy, turning occasionally for even cooking.

· Remove with a slotted spoon and drain on kitchen paper.
