Veg Mayonnaise Sandwich Recipe: Creamy, Crunchy, and Quick

Ingredients:

· 4 slices of whole wheat or multigrain bread

· 2 tbsp mayonnaise (regular or low-fat)

· ½ small cucumber, thinly sliced

· ½ small carrot, grated

· ½ small capsicum, thinly sliced

· 2–3 tomato slices

· 1 small onion, thinly sliced (optional)

· salt and pepper to taste

· 1 tsp lemon juice (optional)

· Fresh lettuce or coriander leaves

Instructions:

1. Prepare the filling:

o In a bowl, mix mayonnaise with a pinch of salt, pepper, and lemon juice.

o Add cucumber, carrot, capsicum, onion, and tomato slices. Mix gently.

2. Assemble the sandwich:

o Spread the veggie-mayo mixture evenly on one slice of bread.

o Top with lettuce or coriander leaves.

o Cover with the second slice and press gently.

3. Optional:

o Toast lightly on a pan or sandwich maker for a warm, crispy version.

4. Serve:

o Cut diagonally and serve immediately with green chutney, ketchup, or sauce.
