Instant Pot cauliflower Soup Recipe

This creamy and comforting Cauliflower Soup is easy to make in an Instant Pot. It’s healthy, low in calories, and perfect as a light lunch, dinner, or starter.

Ingredients:

1 medium cauliflower, cut into florets

1 medium onion, chopped

2-3 garlic cloves, minced

1 medium potato, peeled and chopped (optional, for extra creaminess)

4 cups vegetable or chicken broth

1 teaspoon olive oil or butter

Salt, to taste

Black pepper, to taste

1/2 teaspoon dried thyme or rosemary (optional)

1/2 cup milk or cream (optional, for extra creaminess)

Fresh parsley or chives, chopped (for garnish)

Instructions:

Sauté the Aromatics:

Turn on the Instant Pot to the “Sauté” mode.

Add olive oil or butter, sauté onion until translucent.

Add garlic and cook for 30 seconds until fragrant.

Add Vegetables:

Add cauliflower florets and chopped potato (if using) to the pot.

Season with salt, black pepper, and dried thyme or rosemary if using.

Add Broth and Cook:

Pour in the vegetable or chicken broth, ensuring the vegetables are mostly submerged.

Cancel “Sauté” mode, close the lid, and set the Instant Pot to “Pressure Cook” or “Manual” on high for 8 minutes.

Release Pressure:

Once cooking is complete, do a quick release of pressure. Carefully open the lid.

Blend the Soup:

Using an immersion blender, blend the soup until smooth and creamy.

If desired, stir in milk or cream to make the soup richer and silkier. Adjust seasoning if needed.

Serve:

Pour the soup into bowls, garnish with chopped parsley or chives.

Serve hot with crusty bread or croutons.

Tips:

For a nutty flavor, roast the cauliflower florets in the oven for 10 minutes before adding to the Instant Pot.

You can add a pinch of nutmeg or smoked paprika for extra depth of flavor.

For a vegan version, use olive oil instead of butter and coconut milk instead of cream.
