Aval Payasam Recipe (Beaten Rice Sweet Pudding)

Ingredients (Serves 4–6)

· 1 cup aval / poha (flattened rice / beaten rice)

· 2 cups full-fat milk (or coconut milk for a vegan version)

· 1/2 cup jaggery, grated (adjust sweetness)

· 1/4 tsp cardamom powder

· 1–2 tsp ghee (clarified butter)

· 10–12 cashew nuts

· 10–12 raisins

· Optional: A few saffron strands for aroma and festive color

Step-by-Step Preparation

1️⃣ Prepare the Beaten Rice

· Rinse aval lightly and soak for 5–10 minutes if using thicker varieties.

· Drain excess water before cooking.

2️⃣ Cook in Milk

· In a pan, bring milk to a gentle boil.

· Add the soaked aval gradually and simmer on low heat until it softens, stirring occasionally. (~10 minutes)

3️⃣ Sweeten with Jaggery

· Dissolve jaggery in a little warm water and add it to the milk-aval mixture.

· Stir well until fully dissolved.

4️⃣ Flavor the Pudding

· Add cardamom powder and saffron strands (if using) for a festive aroma and color.

5️⃣ Garnish

· Heat ghee in a small pan.

· Fry cashew nuts and raisins until golden and plump.

· Add them to the payasam before serving.
