Early in the morning, the lively streets of madhapur in hyderabad come alive with the delicious aroma of biryani in addition to the perfume of freshly made chai. The city is also seeing a rise in the popularity of 4 am biryani stands, drawing large groups of people who are excited to taste Hyderabad's favorite meal, biryani, even before the sun comes up!
To perfect the biryanis that are ready to be served when the clock strikes four in the morning, these stall owners begin cooking at midnight. After serving hundreds of clients in a matter of hours, their containers are empty by the time the sun rises.
Shanta's 4 AM Biryani, a stand near Vivekanandanagar that is open from 4 am to 8 am, is one such popular place. "We start preparing our biryani at midnight and open our stand at four in the morning. Owner rahul of Shanta's 4 AM Biryani stated, "By the time we close at 8 am, we would have already served thousands of customers and leave with empty vessels."
Sai Anna's 4 AM Biryani in Borabanda is not far behind. This vendor serves both vegetarians and non-vegetarians with a wide selection of biryani types. It is open from 4 am to 10 am.
"We provide Mutton Kushka pulao for Rs. 280, chicken Kushka for Rs. 200, and Paneer Kushka for Rs. 220. Apart from biryanis, we also provide plain rice for Rs. 100 and kebabs for around Rs. 250," the stall's proprietor, Sai Anna, added.
Large groups of people are lining up outside the kiosks, expecting the biryanis even before four in the morning. Every day, Shanta's 4 a.m. Biryani attracts thousands of patrons; on Sundays alone, that number rises to 3000. On weekdays, Sai Anna's 4 a.m. Biryani serves about 500 patrons, but on weekends, it sees an increase of 1000 to 1500 patrons.
