The potato and chickpea-filled snack known as gol gappa is consumed in Punjab, Haryana, Delhi, Uttar Pradesh, and other north indian states before being dipped in jaljeera-flavored water. The main ingredient in the dish, known as puchkas or fuchkas in West bengal and parts of bihar and Jharkhand, is tamarind pulp.

Legend has it that the origins of the well-known snack go back to the time of the epic Mahabharata, when Draupadi, a newlywed, data-faced the task of feeding her five husbands with limited resources. Draupadi created the first pani puri by filling little pieces of fried dough with a leftover potato and vegetable mixture. She only had a small amount of wheat dough to work with.
